Flavored with many spices, in this recipe, the brinjals are cooked in tempering of nutrient-dense seeds. It has a rich paste that is brimming with flavor. It is rich in protein and fiber.

8 brinjals, 1/4 tsp mustard seeds, 1/4 tsp fenugreek seeds, 1/4 tsp nigella seeds, 8-10 curry leaves, 3 slit green chiles, oil for cooking, salt to taste, 2 tbsp sesame seeds, 2 tbsp grated coconut, 2 tbsp raw peanuts, 1 tsp chopped ginger, 1 tsp chopped garlic, 1/4 cup chopped onion, 1/4 tsp turmeric powder, 1 tsp coriander powder, 1 tsp cumin seeds powder, 1 tsp chili powder, 1 tsp tamarind pulp, 2 tbsp chopped coriander
1. Combine sesame seeds, coconut, peanut, ginger, garlic and onions in a non-stick pan. Dry roast them on a slow flame.
2. Add turmeric powder, coriander powder, cumin seeds powder, chilli powder and tamarind pulp. Blend them to a smooth paste using ½ cup water.
3. Slit the brinjals into 4 parts from the center and let them remain joined from the stem.
4. Heat oil in a non-stick pan and add mustard seeds, fenugreek seeds and nigella seeds. Saute for 30 seconds.
5. When the seeds splutter, add brinjals,curry leaves and green chiles and saute for 3 minutes.
6. In the same pan, add coconut and sesame paste and cook for 2 minutes.
7. Now, add cooked brinjals and ½ cup of water with salt. Mix them all and cook on a medium flame.
Coat them well with the paste and serve hot.
