Vegetable Cutlets are a great way to have all the nutritious vegetables and also maintain that perfect taste. These cutlets are rich in vitamins and minerals and have healthy fats too.

2-3 boiled potatoes, 1 cup tender peas, 1 medium carrot julienned, 8-10 beans finely chopped, ½ cup besan, 1 cup bread crumbs, coriander leaves chopped, 1 tsp ginger chopped, salt as needed, oil for frying
1. Mash the boiled potatoes in a large bowl. Add peas, carrots, beans, coriander leaves, ginger and mix well.
2. Add besan and bread crumb and mix well to form a kind of dough.
3. Take small portions of the veggie mixture and make small balls of it.
4. Heat oil in a deep skillet and pour those balls into the skillet. Fry on medium heat until turns golden brown.
Serve with fresh green coriander mint chutney.
