Babies get easily bored of with boiled eggs over time and these capsicum eggs comes to rescue. Capsicum Eggs recipe is the great snack option for babies and it is one of the best ways to include capsicum and eggs in their diet. It is rich in proteins, vitamin A, and many other nutrients.

2 eggs, 1 chopped onion, 1 blanched tomato, 1 capsicum diced, salt, butter, coriander leaves for garnishing
1. Heat some butter in pan. Throw in chopped onions and saute for a minute.
2. Add diced capsicum in a pan and saute for another half minute.
3. Now, add chopped blanched tomato and cook for a minute.
4. Meanwhile whisk together both eggs with salt.
5. Now pour the well beaten eggs in a pan and scramble them. Sprinkle some salt if needed.
Serve the tasty Capsicum Eggs with a dressing of some cheese.
